First morning: Pineapple honey scone, spinach, goat cheese, and local egg fritatta, peach coconut muffin, and some dreaming cow yogurt. The muffins! And you can see the nalgene Travis bought because it was my favorite colors. He is the sweetest.
For lunch we had salmon tamales (ahhhh!), fresh guacamole, and a chickpea quinoa salad. We had elderberry punch throughout the whole trip, and I'm kind of obsessed. It is so good!
The salad had homemade honey dill dressing (amazing!), I can't remember the deal with the white beans, the pasta was corn pasta, and there are some roasted beets in the back. It was my first time eating beets and they were GOOD! It felt like we were eating a lot, but since we were walking all over the farm we really needed too. Even with all the food I didn't feel bad at all (i feel sick every vacation because I over indulge).
Another peach coconut muffin, some off the hooooook banana bread, and a goat cheese/spinach/egg quiche. I need to get the recipe for those muffins. I've been dreaming of them!
Salmon, with pearled barley and another good salad with a balsamic dressing. Mmm, i wish the caterer could cook for me every day. I felt great after those two days. Probably the combo of good food and fresh air.
Is that the same Wild Indigo that makes Zum Soap? Love that stuff!

ReplyDeleteI just tried beets this week too. I really like them. I don't know what I was afraid of. Food in Western NC mountains is pretty rocking. I can't think of a better place to eat (except maybe the NC coast). :) Sounds like a great time and great food.
